This is a quick and absolute healthy breakfast with quinoa , coconut milk and Mangoes. perfect kick for a day .This would be a alternative breakfast from your normal breakfast…combination of these three make it tasty and healthy too.
Quinoa is easy to prepare and its fluffy texture and slightly nutty flavor make it an excellent alternative to white rice or couscous. When cooked, its grains quadruple in size and become almost translucent.

Quinoa can be prepared much like rice. It should usually be rinsed or soaked before use to remove its bitter coating, so check packet instructions.

- 160 gm quinoa
- 4 dates pitted and chopped
- 2 tsps vanilla essence
- 1/2 tsp cinamon powder
- 21/2 coconut milk
- 1 mango diced

- 3 tbsps sugar
- 80 ml coconut milk
- 1 juice of lim

Instructions
- Rinse quinoa under running water and add to the pan.To this add vanilla essence ,dates chopped , coconut milk and water cinamon powder.cook until quinoa is tender.atlast add diced Mangoes stir for 2 minutes .if u want you can refrigerate it.
- You can even add sugar if u want to be more sweeter....as there is dates ,mangoes .sweet would be enough .and this dish will not be so sweet as kheer...u can adjust accordingly ....
For sticky mango:
- Heat pan with little butter.press the mango cheeks in sugar then place the sugar side in pan and cook until caramelised .Remove mango from pan then add coconut milk, lemon juice and little water stir to combine and set aside.
- serve cooked quinoa topped with grilled mangoes and pan juices drizzled over it.. Enjoy healthy breakfast...
