To prepare Arabic Masala
  1. Dry roast all the ingredients listed for masala except paprika and nutmeg powder
  2. Then grind it to powder with paprika and nutmeg powder… store in container.
To prepare Kabsa/rice
  1. In a pan add oil and splutter the whole spices except dry lemon.
  2. Add in onion and cook till soft then add ginger garlic paste and saute until raw smell goes.
  3. Add in spice powder,tomato paste and tomato puree and saute it well ..
  4. Then add in the chicken pieces, crushed chicken cubes and dry lemon give it a quick mix add water and cook the chicken.
  5. Once the chicken is cooked remove the chicken pieces and to the chicken broth add required water if needed for rice then add washed and soaked rice to it and cook till rice is done
  6. Rub the Arabic Masala mixed with oil to the chicken pieces and grill /roast until browned
  7. Once the rice is done keep the grilled chicken pieces on top it… in a small bowl keep the burning charcoal and add the ghee/oil to it and close with lid to prevent smoke escaping… keep it closed for 5 minutes..
  8. serve hot
