A supermoist ,light ,fluffy eggless cake with goddness of carrots and dates..
I have very little eggless recipes in my blog..when ever I post any cake recipe I get request for eggless version.. But the thing is that I never go for eggless recipes .I had a feeling that it wont be as soft as egg cakes.. Recently i have gone for a eggless baking class , it has changed my view on eggless cakes…so this Recipe i got from there and one of best loaf cakes to have as a evening snack or even for breakfast with tea.Its light, super moist and you could make it more healthy even by adding whole wheat flour..And if you want to make more rich then you can substitute with softened butter instead of oil..
I have chopped dates in this recipe but you could also soak them in hot milk and grind it to smooth paste and add to the batter.Hope you all will like this recipe as I did..
Eggless Dates Carrot cake
Ingredients
- 1 1/4 cup all purpose flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp cardomom powder
- pinch of salt
- 3/4 cup brown sugar
- 1/2 cup oil/softened butter
- 1/2 cup whisked yoghurt
- 1/4 cup Hot milk
- 1 cup grated carrots
- 1 cup chopped dates
- 1/2 cup chopped cashewnut (optional)
- 1 tbsp flour
Instructions
- Pre heat oven @180 c
- Sift together flour,baking powder, baking soda ,pinch of salt,cardomom powder.
- Beat oil/butter and brown sugar until well combined.Then add in hot milk ,yoghurt, vanilla essence mix well.
- Add in sifted flour and mix well.
- In a bowl add grated carrots and chopped dates with a tbsp of flour mix well.Add this to the batter and mix well.
- Pour the batter into the greased pan and bake @180 c for 40-45 minutes or until tooth pick inserted comes out clean.
