Chicken Tikka Biriyani

Ingredients
Chicken Marination
- 1 kg chicken
- 2 tbsp yoghurt
- 1 tbsp ginger garlic paste
- 1 tbsp redchilli powder
- 1 tbsp coriander powder
- 1 tsp cumin powder
- 1/2 tsp garam masala
- 1/4 tsp turmeric powder
- 1 tsp pepper powder
- 1 tbsp lemon juice
- 1 tbsp oil
- salt to taste
Chicken Masala
- 4 tbsp oil
- 2 medium Onions chopped
- 2 medium tomato chopped
- 1 tbsp ginger garlic paste
- 4 slits Greenchilli
- 1/4 cup mint leaves
- 1 tbsp redchilli powder
- 2 tsp coriander powder
- 1 tsp cumin powder
- 1/4 tsp turmeric powder
- 1/4 tsp garam masala
- 1 cup coriander leaves
- 1/2` cup yoghurt
- 1 tbsp kasoori methi
- 2 inch cinnamon
- 3 cardomom,cloves each
- 2 Bay Leaf
- 2 tsp shahi jeera
- salt to taste
- 1 piece of coal
For Rice
- 4 cups rice
- 2 Bayleaf
- cardomom,cinnamon
- 1 tsp shahi jeera
- 1 tbsp vinegar
- salt to taste
- 2 tbsp oil
Other Ingredients
- 1 cup Fried onions
- 1 cup coriander leaves chopped
- 2 tsp garam masala
- 1/2 cup warm milk
- pinch of saffron
- saffron essence/rose water
- 2 tbsp ghee
Instructions
- Marinate the chicken pieces with the ingredients under Chicken marination list for 2 hours.
- In a pan add oil and cook the chicken till done .
- Cook the rice by boiling water with cardomom,cinnamon,,shahi jeera, bayleaf , vinegar , salt for 6 minutes then strain it .
- In another pan add oil ,whole masala, onions,tomato,gingr garlic paste ,greenchilli slits,mint leaves cook till they are soft then add in all powders cook till oil is seperated... add in yoghurt ,coriander leaves,kasoori methi cook well .then add in the cooked chicken mix well.
- Place a small kattori with heated coal inside the pot in the middle of chicken masala then add in tsp of ghee ..close the lid and smoke the chicken masala.
- Boil milk with saffron strands ,saffron essence/rose essence(optional) then add in ghee mix well.keep aside
- Once the smoke is setteled open the lid and remove the coal ...then layer the chicken masala with half of the rice cooked ,fried onions ,milk saffron mix ,coriander leaves,garam masala.agin layer with remaining rice and repeat the process...Finally close the lid tightly and place the pot on top of a tawa and cook (dum)for 20 minutes in medium flame until steam comes out.
