Carrot halwa is one of te most popular dessert in north india..Rabri is an another Indian dessert that is made with milk. Traditionally, the milk is boiled and simmered in large pans until the milk thickens and almost coagulates to form milk solids. Sugar is added to sweeten it. we have seen restaurants serving gajar halwa / carrot halwa with icecream… I got these Idea from a Google when I was searching for a innovative indian recipe.. so I thought why don’t we give a little more variation …. I have already prepared the gajar /carrot halwa , cooled them then moulded them into a cup by pressing them in cupcake moulds and again refrigerated to get desired shape..prepared some rabri and served them on these beautifully prepared halwa cups…

Carrot Halwa cups with Rabri
Ingredients
- 3 lage carrots
- 1/4 cup ghee
- 1/2 cup sugar
- 1 1/2 cup milk
- 2 tbsp milk powder
- 1/4 tsp cardamom powder
- 1 tbsp Almonds
- 1/2 tbsp pistachio
- 1 1/2 tbsp cashew nut
- 500 ml milk
- 1/4 cup sugar
- 1/4 tsp cardo.om powder
- 2 tbsp cashewnut chopped
- 2 tbsp Almond chopped
- 2 tbsp pistachio chopped
- few strands of saffron
Instructions
- Melt ghee and roast nuts and keep aside.Then add grated carrots and saute for a while
- Then add the milk and cook till carrots are soft. Then add milk powder,cardamom powder add sugar and cook until thickened and allow it to cool.
- Line a muffin pan with cling wrap, take 2 tablespoons of Halwa, press down into muffin mold, firmly around the sides and bottom forming a cup. Refrigerate for an hour until firm
- Boil the milk in medium flame.Once it comes to boil, keep the flame low and cook slowly.
- Stir frequently and let the malai (cream) collect in the sides
- Keep stirring the milk once in a while, so that it does not stick to the bottom and collect malai / cream on one side and continue till it is thickened and reduced
- Soak the saffron in milk and add to it.Now add sugar, cardamom powder stir it in well. Then add the nuts .
- Pour this into the halwa cups .garnished with chopped nuts
Recipe Notes
As rabri itself will be thick...you can serve them by pouring on the carrot halwa cups or if you want to set them then you can add about 1 tsp gelatin soaked in water, melted to the rabdi mix and allow them to set it.
