Today its 10th of November ,Time for Muslim food bloggers challenge and we are completing one year of this challenge… Alhmdhulila All thanks to Rafeeda who started this challenge .. For this month challenge we can select any of the previous month challenge and do . so I selected C 11 which is ‘ cooking a bookmarked dish from a Muslims blogger’
So I selected this Egyption Coconut cake from Rafeeda’s blog “THE big Sweet tooth” which I have bookmarked when she posted..
This is one of the easy to make dessert . A one bowl cake just mix everything and bake till done.. then soak them in syrup .so it will be a moist and juicy cake. Here we are adding syrup which is mixed with condensed milk that make the dessert more rich and creamy.
Basseema ~ An Egyption Coconut cake
Ingredients
- 2 cup dessicated coconut
- 1/2 cup flour
- 1/2 cup milk powder
- 3 tbsp custard powder
- 1 tbsp baking powder
- 1/2 cup sugar
- 3 large eggs
- 1 cup cream
- 3/4 cup yoghurt
- 1/2 cup oil
- 3/4 cup water
- 3/4 vup sugar
- 1 tbsp rose water
- 1/2 tin condensed milk
Instructions
- Combine the sugar and water in a saucepan and cook till it becomes syrupy.
- whisk in the condensed milk and rose water. Allow to come to room temperature.
- Preheat oven to 180°c
- Mix all the ingredients for the cake till well combined. Grease a large pan and pour the batter.
- Bake for 30 to 40 minutes till the sides are cooked and the cake pulls from the sides
- Take out the cake and immediately pour the syrup all over the cake.
- leave the cake undisturbed for an hour or even more till the syrup is all soaked up.
- cut into squares and serve!
